Hygiene and Food Safety

Milk storage room (the dairy)

MUST CRITERIA

The dairy must:

be clean and tidy and be clear of accumulated rubbish, any products or chemical substances not in constant use or any feedingstuffs;

  • be kept totally secure at night and when unattended.
  • have doors and walls that are complete with a washable finish.
  • have floors that are well drained, complete and maintained.
  • have any ceilings, roof linings, girders and/or beams maintained to minimise the accumulation of dirt and dust and any risk of vermin access.
  • have windows that are well fitting, entire, weatherproof and equipped with either fly-screens or permanently secured shut.
  • have lights with clean protective coverings to minimise the risk of contamination.
  • have dedicated and accessible hand washing and drying facilities.
  • be free from birds, vermin, cats and dogs.
  • take measures to control of the presence of insects.
  • be free from foul smells and airborne dust. 

 Milk storage facilities (External Silos) if applicable.

MUST CRITERIA

  • The silo must have access points which are kept totally secure at night and when unattended.
  • The silo must be located in a clean environment with clean and cleanable access points.
  • The silo must have provisions to allow the sampling and inspection of milk.
  • The silo must have adjacent, dedicated and accessible hand-washing and drying facilities.

 Milk Storage

MUST CRITERIA

  • The bulk tank (including external silos) and any ancillary equipment must be capable of cooling the milk to the required temperature.
  • The bulk tank (including external silos) and any ancillary equipment must be regularly and thoroughly cleaned internally.
  • The bulk tank (including external silos) and any ancillary equipment must be externally clean.
  • The bulk tank (including external silos) lid(s) / hatch(es) must be kept routinely closed.

Milk collection

MUST CRITERIA

  • The milk collection area must be cleaned, as necessary, before each collection to ensure that the tanker hose is not externally soiled when in use.
  • The milk collection area must have an operational area made of a well-drained concrete or similar surface.
  • The milk collection area must have unobstructed access.
  • The milk collection area must have access lights to facilitate the safe collection of milk.

  Milking Parlour – Conventional Systems and Milking Bails

(This includes conventional parlours, robotic parlours and movable milking bails).

MUST CRITERIA

  • The parlour must be clean and tidy and free from accumulated dirt, dung and dust.
  • The parlour must have floors, walls, doors and fixtures and fittings that are complete and undamaged with a washable finish.
  • The parlour must have ducts, jars, clusters and pipework that are clean and properly maintained.
  • The parlour must be clear of products, chemical substances or other items not in constant use.
  • The parlour must have ceilings, roof linings, girders or beams maintained to minimise the accumulation of dirt and dust and any risk of vermin access.
  • The parlour must be adequately lit and have lights with protective coverings.

SHOULD CRITERIA

  • The milking parlour should have measures in place to control birds, vermin, cats and dogs.
  • The milking parlour should have measures in place to control insects.

 Robotic Milking Systems – Milking Area (if applicable)

MUST CRITERIA

  • The robotic milking system area must be clean and tidy and free from accumulated dirt, dung and dust.
  • The robotic milking system area must have equipment that is clean and properly maintained.
  • The robotic milking system area must be clear of products, chemical substances or other items not in constant use.
  • The robotic milking system area must have ceilings, roof linings, girders or beams maintained to minimise the accumulation of dirt and dust.
  • The robotic milking system area must be adequately lit and have lights with protective coverings.

 SHOULD CRITERIA

  • The robotic milking system area should have measures in place to control birds, vermin, cats and dogs.
  • The robotic milking system area should have measures in place to control insects.

 Cow Cleanliness and Milk Inspection – Conventional Systems and Bails

MUST CRITERIA

  • Cows must have udders and teats that are clean and dry prior to milking.
  • Cows must be able to be cleaned, if dirty, with clean and potable water available throughout the parlour.
  • Cows must be clearly identified if their milk is unfit for human consumption, such as those having been treated with antibiotics or other medicines.
  • Cows must be milked last or with a separate bucket unit or system if their milk is unfit for human consumption.
  • Cows must have their milk individually inspected at the start of milking prior to it going into the bulk tank.

 Cow Cleanliness and Milk Inspection – Robotic Milking Systems (if applicable)

MUST CRITERIA

  • Cows must have teats that are clean and dry prior to milking
  • Cows must be able to be cleaned, if dirty, with clean and potable water available within the robotic milking system.
  • Cows must have their milk individually inspected at the start of milking prior to it going into the bulk tank.
  • Cows must be covered by a system which ensures they are clearly identified and that their milk is segregated if it is unfit for human consumption.

 General hygiene

MUST CRITERIA

  • Stockmen must wear suitable, clean working clothes.
  • Stockmen must follow good hygiene practices that ensure their hands and arms are kept clean when milking.
  • Stockmen must cover cuts or wounds with an appropriate, waterproof dressing.
  • Stockmen must not be involved with the milking process if through illness they could contaminate raw milk.
  • Smoking must not be allowed in the dairy / parlour.

 Chemicals

MUST CRITERIA

  • Chemicals and cleaning agents must be used in accordance with the manufacturers instructions.
  • Chemicals and cleaning agents must be chosen and used in such a way as to ensure they do not have an adverse effect on the milk.
  • Chemicals and cleaning agents must be used only with water of the correct temperature that is regularly checked at the start and end of the wash cycle.
  • Chemicals and cleaning agents must not be used in or close to the dairy and milking parlour if they are strongly scented or phenolic (due to the risk of milk taint).
  • Chemicals and cleaning agents must be stored in a lockable area separate from the dairy other than those in routine use.
  • Chemicals and cleaning agents must have relevant data sheets available for use.

 Water Quality

MUST CRITERIA

  • There must be a sufficient supply of clean and potable water available for milking operations and for cleaning all equipment that comes into contact with milk.

Legal registration

MUST CRITERIA

  • The farm must be registered with the appropriate enforcement authority.
